Zhang Huichun is a master of making Wuyi rock tea. In the 1990s, he began to learn to make
the tea. It took him about 5 years to learn the skills.
When Zhang shakes tea leaves, he has to decide when to stop by looking at the color. From
shaking a few times to hundreds of times, only years of experience can help you find it out.
Roasting(烘烤,焙) is also significant. "Every 50 minutes, you have to turn over the leaves, or
they may burn," Zhang says.
