Chinese food culture
With a history of thousands of years, China's food culture is an important part of its culture. Rooted in traditional Chinese philosophy, Chinese cuisine and its cooking process reflect the harmony of man and nature. Under the guidance of traditional Chinese medicine, Chinese cuisine aims to maintain people's health through matching different foods.
Types of courses
- Cold dishes — Cold dishes are the first course in traditional Chinese banquets. People attach great importance to the designing of the dish, which is the "shape" of the dish. Normally, cold dishes can give people an appetite (胃口).
- Hot dishes — There are many kinds of hot dishes. Normally, the main course is a hot dish. People usually use many techniques to cook hot dishes, such as stir-frying (爆炒), deep frying (油炸), boiling and steaming.
- Soups and congee — Soups are served following the hot dishes. Normal ingredients for soups are vegetables and meat. Chinese people believe that soups are good for health. Congee is a kind of porridge (in Chinese cookery), which is a good choice for breakfast. Congee is easy to digest, so it's also a great choice for patients and infants (幼儿).
- Staple food (主食) — Rice is the staple food in southern China, for southern China is a main rice farming area. People mainly eat steamed rice. In northern China, which is a main wheat farming area, people normally eat flour-based food, like noodles, *mantou* and dumplings.
- *Xiaochi* — It refers to different kinds of snacks. They are often sold at street stalls or small restaurants. Different regions have different *Xiaochi*. They are very popular among tourists and local people.
