White Vegetables, Good Medicine
We're often told to "eat a rainbow", so we believe that the more colors a food has, the better it is. In fact, some white vegetables, such as cauliflower, mushrooms and onions, can offer us what we need.
As far as we know, they are rich in umami (鲜味), the fifth basic taste after sweet, salty, bitter and sour. In a word, all these white vegetables can help simple dishes come alive.
Some white vegetables are good medicine actually. Garlic, for example, is able to help hair grow, and keep colds and flu away. Julia Child said, "I cannot imagine a world without onions, so I always put slices of onion while cooking for my customers." And it is really like that: an onion on our plate can help us enjoy our life with a lower risk of cancer.
