In China eating dumplings on New Year's Eve is a tradition. Why?
One reason is that the shape of the dumplings looks like the old Chinese gold ingots (元宝) used as money, so dumplings mean wealth (财富). And it is said that eating dumplings on New Year's Eve can bring you good luck. Some families put a coin in one of the dumplings, and the person who finds it will be the luckiest (最幸运的) one in the New Year.

The other reason why people in China eat dumplings is according to its Chinese pronunciation "jiǎozi". In China's traditional timing system, after midnight, the first two hours of the change at the end of the lunar (农历) old year and the beginning of the lunar new year is called "jiǎozi".
