People have long known that the darker the colour of the food is, the more antioxidants(抗氧化物质) and nutrients it will have. In fact, people were encouraged to eat more purple foods after a study found that those who ate purple fruits and vegetables regularly often had low cholesterol(胆固醇) and a reduced risk of getting high blood pressure.
Research shows that these foods get their purple colour from the anthocyanin(花青素). They have been linked with antioxidants and anti-aging special qualities in the body. Purple foods help improve bone health, lower the risk of some cancers and improve memory. Take purple sweet potatoes for example. While the standard sweet potato is packed with health benefits of its own, the purple sweet potato is even better for us. These brightly-coloured sweet potatoes have a similar taste to their orange siblings, which are also filled with the anthocyanin. Therefore, purple sweet potatoes help with digestion and have anti-inflammatory special qualities.
Nutrition advisers agree that purple foods are full of natural health benefits. “The benefits of antioxidants have long been discussed. They are also known to fight disease, keep you looking younger and be good for your heart—so, why not eat them?” one says.
