①Sanzi is a kind of traditional Chinese food. It has a long history. It first came out in the Spring and Autumn Period(770 BC - 477 BC),when people called it hanju—a food for the Hanshi Festival or Cold Food Festival.
②At that time, people mustn't use the fire or cook food during the festival. So,they needed to get sanzi ready before that day. Jia Sixie from the Northern Wei Dynasty(386 AD - 534 AD) talked a lot about the making of hanju in his great book Important Arts for the People's Welfare(《齐民要术》). And Su Shi from the Song Dynasty(960 AD - 1279 AD) even wrote a poem for hanju.
③Sanzi is a salty deep-fried dough food(油炸面食). The maker puts the long pieces of dough in a bowl. Before putting them in the bowl, the maker needs to put oil(油) on them. When the dough becomes proper in elasticity(弹性),the maker would put it around a hand, pull(拉) the dough, fold(对折) it back and pull again until the thin noodle shape is made. Then the maker deep-fries it in oil.
