Steps:
① Mix water, tea leaves, thin soy sauce, black soy sauce, cinnamon, star anise, and salt in a large cooking pan; bring the soup to a boil. Then cover the pan and simmer (文火慢煮) for 1 hour.
② At the same time, cook eggs with a little salt and water in another pan. Tap (轻敲) cooled eggs until they get some cracks (裂缝). These cracks will allow the flavor of the soup to seep into the eggs later.
③ Add the egg into the soup from Step ① for at least 8 hours. The longer they soak, the more delicious they will become.
