Hand-grasped Mutton (手扒羊肉)
It is a traditional dish in northwestern China. The cooking way in Xinjiang is very interesting. According to an old cooking book,people cut a whole lamb (羔羊) into 12 pieces and then boil them. The pieces of meat are too big for them to hold by chopsticks (筷子),so they use hands to eat.
Roasted Stuffed Buns (烤包子)

They stay outside with their cattle and sheep all year,and they often take a knife with them. During lunch time,they would cut up mutton for making buns,and then cook them over a fire.
